Get creative with this fun dinner recipe using our All Natural Cauliflower Fried Rice!

Ingredients

  • 2 Bags (10 oz.) Path of Life All Natural Cauliflower Fried Rice
  • 2 Tbsp Gluten-Free Soy Sauce (Tamari)
  • ½ Cup Lite Coconut Milk
  • 2 Tbsp Thai Red Curry Paste
  • 2 Tsp Curry Powder
  • 2 Tsp Brown Sugar or Palm Sugar
  • 2 Garlic Cloves, minced
  • 1 Pkg (14 oz) Extra Firm Tofu, drained and patted dry, sliced into four planks
  • ¼ Seedless Cucumber, thinly sliced
  • ¼ Small Red Onion, thinly sliced
  • ¼ Tsp Sea Salt
  • 1 Tbsp Sugar
  • 2 Tbsp Rice Vinegar

Instructions

  1. 1. For marinade; combine soy sauce, coconut milk, curry paste, curry powder, sugar and garlic into a small mixing bowl. Whisk well. Place tofu into a resealable plastic bag. Pour marinade into bag. Seal and refrigerate for 30 minutes.
  2. 2. Combine cucumber, onion, salt, sugar and vinegar in a separate mixing bowl. Mix well and set aside.
  3. 3. Heat grill over medium high heat. Remove tofu from marinade and lay flat on a cutting board. Insert two skewers lengthwise through each plank of tofu. Grill tofu 1-2 minutes per side or until grill marks appear.
  4. 4. Cook Cauliflower Fried Rice according to package instructions and divide evenly into four serving bowls. Top each with one grilled tofu and cucumber salad. Sprinkle with cilantro, if desired.
