Broccoli Soup



A creamy, delicious soup made with Path of Life Organic Broccoli Florets.


  • 1 Bag (16 oz.) Path of Life Organic Broccoli Florets
  • 1 Tbsp. Butter
  • 4 Leeks, chopped, washed and drained
  • 1/4 Tsp. Each Salt and Black Pepper
  • 2 Tbsp. Fresh Cilantro, chopped
  • 1 Carton (32 oz.) Low-Sodium Chicken or Vegetable Broth
  • 1 Can (12 oz.) Fat-Free Evaporated Milk


Chef’s Tip: Leeks contain a lot of dirt on the inside so they need to be washed thoroughly.  To prepare leeks, cut off root end and discard.  Cut leeks in half lengthwise then crosswise into 1/2-inch slices. Place into a medium bowl filled with cold water.  Agitate leeks to remove excess dirt.  Drain and proceed as recipe directs.

  1. Melt butter over medium heat in a medium saucepan. Add leeks, cilantro, 6 cups of the broccoli (about 3/4 of the bag), salt and pepper. Cook 6-8 minutes or until leeks are softened, stirring occasionally.
  2. Add broth to saucepan and bring to a simmer. Remove from heat and blend in a blender until smooth.
  3. Return mixture to saucepan and add remaining broccoli. Return to a simmer and cook 4-6 minutes or until broccoli is heated through. Whisk in evaporated milk until well-blended.
