Cheese-Stuffed Southwest-Style Quinoa Fritters



This is a fun recipe that perfectly compliments a meatless taco night using Path of Life All Natural Southwest Quinoa.


  • 2 Bags (10 oz) Path of Life Southwest Quinoa, cooked according to package directions and chilled
  • 1 Egg
  • 1 Egg yolk
  • ¼ Cup All Purpose Flour
  • ½ Cup Cotija or Parmesan cheese, finely grated
  • 1 Tsp. Cumin
  • 3 oz. piece Chihuahua cheese, cut into 14 cubes (see Chef’s Tip)
  • ¼ Cup Olive Oil
  • Salsa, lime wedges and coarsely chopped fresh cilantro (optional)


Chef’s Tips:

Chihuahua cheese is a Mexican melting cheese typically used in authentic quesadillas. Other cheeses such as Monterey Jack or Mozzarella can also be used.

Have fun with this recipe! Add other spices to the mix such as ground chipotle pepper, ground coriander or smoked paprika! These fritters are perfect for a meatless taco night!

Once cooked, simply cut the fritters in half, place in warm tortillas and sprinkle with cilantro, chopped onion and your favorite salsa!

  1. Combine Southwest Quinoa, egg, yolk, flour, cheese and cumin in a medium mixing bowl. Mix well.
  2. Divide mixture into 14 balls. Press one cheese cube into each ball and form into round 2-inch patties.
  3. Heat oil in a large non-stick skillet over medium heat until hot. Carefully place patties into pan. Cook 3-4 minutes per side or until golden brown. Transfer to a paper towel-lined plate to drain excess oil.
  4. Serve with salsa, lime wedges and cilantro, if desired.
