Roasted Organic Rainbow Cauliflower with Chimichurri
Flavorful side dish made with Path of Life Organic Rainbow Cauliflower!
1 Pound Path of Life Organic Rainbow Cauliflower, frozen
1/4 Cup Olive Oil, divided
3/4 Tsp. Sea Salt, divided
1/8 Tsp. Black Pepper
3 Tbsp. Each Finely Chopped Fresh Parsley and Cilantro
3 Tbsp. Fresh Lime Juice (About 2 Limes)
2 Tsp. Agave Nectar or Honey
Heat 2 tbsp. of the oil in a large skillet over medium-high heat until hot. Add cauliflower. Sprinkle with 1/4 tsp. of the salt and pepper. Cover and cook, undisturbed 2-3 minutes or until cauliflower begins to brown. Cook an additional 5-7 minutes, stirring occaisionally until golden brown and heated through.
Meanwhile, prepare chimichurri. Stir together herbs, lime juice, agave nectar (or honey) and remaining salt in a small mixing bowl. Stir in remaining oil.
Transfer cauliflower to a serving platter. Drizzle with chimichurri. Serve immediately.
