Simple Garbanzo & Lentil Curry

Description

Want to add a little spice to your dinner? You’ll fall in love with this healthy Curry. Prepared using Path of Life All Natural Garbanzos & Lentils.

Ingredients

  • 1 Bag (10 oz) Path of Life All Natural Garbanzos & Lentils
  • 2 Medium Russet Potatoes
  • 5 Tbsp Olive Oil, divided
  • 2 Tsp Cumin Seeds, whole
  • 1 2 in. Piece Fresh Gingerroot, finely grated
  • 5 Garlic Cloves, finely minced or pressed
  • 1 Medium Spanish Onion, finely diced
  • 3 Plum Tomatoes, finely diced
  • 2 Tbsp Chana Masala Powder (see Chef’s Tip)
  • 2 Tsp Ground Turmeric
  • 1½ Cups Chicken Broth, Vegetable Broth or Water
  • ¼ Cup Fresh Cilantro, chopped
  • Fresh Toasted Naan or Steamed Basmati Rice
  • Fresh Cilantro and Onions, chopped
  • Lime Wedges (optional)

Instructions

Chef’s Tips:
Chana Masala Powder can be found in the Indian section of the grocery store. If desired, substitute the
Chana Masala Powder for Garam Masala Powder.

If using chicken or vegetable broth for this recipe, take notice how salty the broth is. A saltier broth will
reduce the need for salt. If using water, you will need to season with at least 1 tsp of salt when stirring in
the cilantro. Feel free to stir in more broth or water as desired. This mixture will thicken as it stands.

  1. Peel and dice potatoes into ½ in. pieces. Heat 3 tbsp oil in a large (12 in.) nonstick skillet over medium heat. Add potatoes and cook 6-8 minutes until browned; stirring occasionally. Set aside.
  2. Add remaining oil and cumin to skillet. Cook cumin 30-60 seconds or until fragrant. Add ginger and garlic. Cook and stir an additional 30 seconds or until fragrant (do not brown). Add onion and cook 3-4 minutes or until lightly browned; stirring occasionally. Add tomatoes; cook 5-6 minutes. Stir in Garbanzos & Lentils, potatoes, chana masala and turmeric. Cook and stir 30 seconds and add stock or water.
  3. Cover, bring to a simmer and reduce heat to low. Cook 10-12 minutes or until thickened and potatoes are cooked through. Stir in cilantro. Serve with naan/basmati rice, chopped onion and cilantro, if desired.
