Quinoa & Kale Chicken Waldorf Salad

Description

Try our light, refreshing take on the classic Waldorf salad made with Path of Life Organic Quinoa & Kale!

Ingredients

  • 2 Bags (10 oz.) Path of Life Organic Quinoa & Kale, cooked according to package directions and cooled to room temperature
  • 1/4 Cup Fresh Lemon Juice (About 1 Large Lemon)
  • 1 Tbsp. Honey
  • 1/2 Tsp. Chopped Fresh Thyme
  • 1/2 Tsp. Salt
  • 1/8 Tsp. Black Pepper
  • 2 Tbsp. Each Olive Oil and Canola Oil
  • 2 Cups Diced Rotisserie Chicken
  • 1/2 Cup Walnuts, toasted and coarsely chopped
  • 3/4 Cup Red Seedless Grapes, halved
  • 2 Celery Stalks, cut on a bias into 1/2-in. pieces (about 1/2 cup)
  • 1 Small Gala Apple, diced into 1/2-in. pieces

Instructions

Chef’s Tips:  To toast the walnuts easily, place into a microwave-safe bowl.  Microwave uncovered on HIGH, 2-3 minutes stirring every 30 seconds or until fragrant.

  1. For dressing, combine lemon juice, honey, thyme, salt and pepper in a small mixing bowl. Slowly add oils while whisking.
  2. In a medium mixing bowl combine Quinoa & Kale, chicken, walnuts, grapes, celery and apple. Drizzle with dressing. Toss and serve.
