Orecchiette with Roasted Garlic Cauliflower, Baby Kale & Mascarpone
Try this pasta dish made with Path of Life All Natural Roasted Garlic Cauliflower!
1 Bag (10 oz.) Path of Life All Natural Roasted Garlic Cauliflower
1 Box (16 oz) Uncooked Orecchiette Pasta
1/4 Tsp. Crushed Red Pepper Flakes
2 Cups Dry White Wine (such as Chabilis or Chardonnay)
1/2 Cup Butter (1 stick)
1 Small Red Onion, cut into wedges
4 Cups Baby Kale Leaves, washed
1 Cup (8 oz.) Mascarpone Cheese
1 Tsp. Salt
1/4 Tsp. Black Pepper
Cook pasta according to package directions.
Meanwhile, heat a large skillet over medium-high heat. Add onion and cauliflower. Cook 4-5 minutes or until browned. Add crushed red pepper, wine and butter. Bring to a simmer and cook 9-10 minutes or until wine is reduced by half.
Add cooked pasta, kale, mascarpone, salt and pepper. Cook and stir an additional minute or until kale leaves are wilted. Serve with shaved parmesan, if desired.
