Quesadillas made with Path of Life All Natural Southwest Quinoa

Ingredients

  • 2 Bags (10 oz.) Path of Life All Natural Southwest Quinoa, cooked according to package directions and cooled to room temperature
  • 1 Small Onion, thinly sliced
  • 3 Garlic Cloves, sliced
  • 1 Tbsp. Oil
  • 1 Can (15 oz.) Tomato Sauce
  • 1 Chipotle Pepper in Adobo Sauce
  • 12 (7-in.) Flour Tortillas
  • 3 Cups Shredded Chihuahua or Monterrey Jack Cheese

Instructions

Chef’s Tip: If desired, make the sauce even spicier by adding an additional chipotle pepper.

  1. Combine onion, garlic and oil in a medium saucepan. Cook over medium heat 5-6 minutes or until onion is soft and lightly browned. Transfer to a blender and add tomato sauce and chipotle pepper. Blend on HIGH until smooth. Return to pan. Bring to a simmer over medium-low. Cook 4-5 minutes or until slightly thickened. Set aside.
  2. Heat a large skillet over medium heat. Top two tortillas with ¼ cup each cheese and Southwest Quinoa. Place into pan and cook 2-3 minutes or until cheese is melted and tortillas are lightly browned. Fold over and press with a spatula. Repeat with remaining tortillas, cheese and quinoa to make 12 quesadillas. Transfer to a serving platter. Serve with chipotle sauce.
