1 Bag (10oz.) Path of Life All Natural Mediterranean Quinoa, cooked according to package directions and cooled to room temperature
8 Egg Whites
1/4 Cup Skim Milk

Preheat oven to 375⁰F. Spray a 6-cup muffin pan with non-stick cooking spray.
Whisk together egg whites and milk. Stir quinoa into egg white mixture.
Divide mixture evenly into wells of muffin pan. Bake 15-20 minutes or until temperature registers 160⁰F with a pocket thermometer. Cool in pan for 10 minutes.
To remove muffins, gently loosen edges of muffins with a plastic knife. Place a cutting board over muffin pan. Using oven mitts, grab sides of pan and cutting board and invert. Lift pan to release muffins.
