Description

Savory Mediterranean Quinoa and egg breakfast sandwich that can be made in advance and reheated.

Ingredients

  • 1 Bag (10 oz.) Path of Life All Natural Mediterranean Quinoa, cooked according to package directions and cooled to room temperature
  • 8 English Muffins, toasted
  • 6 Eggs, beaten
  • 1/2 Cup Milk
  • 1/2 Cup Shredded Provolone or Swiss Cheese
  • 8 Slices Cooked Bacon, halved

Instructions

Chef’s Tip:¬†If preparing in advance, place sandwiches in freezer bags and freeze for up to 1 month.

To reheat the sandwiches in the microwave, place on a microwave safe plate.  Microwave on HIGH for 3 minutes or until warm.

  1. Whisk eggs and milk in a small mixing bowl.
  2. Cook and stir eggs in a 10-inch non-stick saute pan sprayed with non-stick cooking spray over medium-high heat, 3-4 minutes or until cooked but still moist.
  3. Transfer cooked eggs to a mixing bowl; add Mediterranean Quinoa and cheese. Mix well.
  4. Spoon egg and quinoa mixture onto the bottom of each English muffin, top with halved bacon slices and muffin top.
