Description

Try these delicious and nutritious nachos featuring Path of Life Southwest Quinoa! This dish is perfect for healthy entertaining!

Ingredients

  • 1 Bag (10 oz.) Path of Life All Natural Southwest Quinoa
  • 6 Cups Tortilla Chips
  • 1/2 Cup Shredded Monterrey Jack Cheese
  • 1/2 Cup Cilantro Leaves, washed and dried
  • Lime Wedges, optional

Instructions

Chef’s Tip: If desired, queso fresco can be substituted for the Monterrey Jack.

  1. Preheat oven to 350⁰F. Spread tortilla chips in a single layer onto a baking pan. Bake 2-3 minutes or until chips are hot.
  2. Meanwhile, prepare quinoa according to package directions. Remove chips from oven and transfer to a large serving plate.
  3. Top chips with warm quinoa. Sprinkle with cheese and cilantro. Serve with lime wedges, if desired.
