Try this delicious, bite-size appetizer made with Path of Life All Natural Mediterranean Quinoa!
1 Bag (10 oz.) Path of Life All Natural Mediterranean Quinoa, prepared according to package directions
6 Small Portobello Mushrooms
3 Tbsp. Olive Oil
2 Tbsp. Balsamic Glaze
1 Plum Tomato, seeded and diced
1 Tbsp. Fresh Parsley, chopped
Salt and Pepper, to taste
Chef’s Tip: For a heartier version of this recipe, stir 1 cup cooked, crumbled Italian sausage into the quinoa before filling the mushrooms.
Preheat grill to medium heat. Remove stems from mushrooms and scrape out gills with a spoon. Brush mushrooms with oil and season with salt and pepper. Grill mushrooms 4-5 minutes per side until tender. Transfer to a small sheet pan and let stand 5 minutes.
Blot mushrooms of excess moisture using a paper towel. Fill mushrooms evenly with quinoa. Drizzle with balsamic glaze. Top with tomato and parsley.
